The HI83746 photometer is an essential tool for wine analysis, specifically designed to accurately determine the concentration of reducing sugars. Featuring an advanced, exclusive optical system, this meter ensures highly precise measurements every time. Its unique combination of a specialized tungsten lamp, a narrow band interference filter, and a high-performance silicon photodetector guarantees reliable and repeatable results. The dedicated cuvette locking system ensures consistent placement of the vial, maintaining an identical path length for each reading and eliminating potential measurement variance.

Key Features at a Glance:

Built-in timer - Displays the remaining time before a measurement is taken, guaranteeing that all readings are performed at the correct reaction intervals for optimal accuracy.

Zero key function - A single press of the zero key on the meter's face automatically accounts for any color or imperfections present in the wine sample before the reagent is added.

Automatic shut-off - The meter conserves battery life by automatically powering down after 15 minutes of inactivity in measurement mode.

Battery status indicator - Provides a clear display of the remaining battery life.

Error messaging - The display alerts the user with helpful messages for common issues, such as inverted samples or out-of-range readings.

Appropriate unit of measure - The correct unit of measure is clearly displayed alongside each reading for quick reference.

HI83746 optical system diagram

Sugar is a critical element in wine production. During the alcoholic fermentation process, yeast consumes the natural sugars in the grape juice, or must, converting them into ethyl alcohol and carbon dioxide. For certain wine styles, such as semi-sweet or dessert wines, some residual sugar is intentionally left post-fermentation to add sweetness and contribute to microbial stability.

The primary fermentable sugars in grapes, glucose and fructose, are known as reducing sugars due to their ability to be oxidized. The HI83746 photometer utilizes the Fehling method to accurately determine reducing sugar concentration. When a sample containing these sugars reacts with the alkaline cupric tartrate (Fehling reagents), a color change occurs. The intensity of this color change is directly proportional to the sugar concentration in the sample.

This color change is then analyzed using the Beer-Lambert Law, which states that the absorbance of light is directly proportional to the concentration of the substance. The HI83746 employs a 610 nm narrow band interference filter, allowing only a specific orange wavelength of light to pass through to the photodetector. As the color of the reacted sample deepens, it absorbs more light, resulting in a measurable decrease in transmittance and a more precise reading. The meter is capable of measuring reducing sugars up to 50.00 g/L (ppt).

Typical content of reducing sugars in must and wine

Normal 10 to 20 % 100 to 200 g/L
In Fermentation 4 to 12.5 % 40 to 125 g/L
Wine Sweet 2.5 to 12.5 % 25 to 125 g/L
Semi-Sweet 0.8 to 2.5 % 8 to 25 g/L
Almost Dry 0.2 to 0.8 % 2 to 8 g/L
Dry 0 to 0.2 % 0 to 2 g/L
