APERA INSTRUMENTS / 5053 / AI237
5053 is a single-button salinity tester for soups, broths, sauces and other compatible liquid foods. Its platinum-black conductivity sensor reports a NaCl concentration scale from 0 to 20.0%. The kit includes 50 mS/cm calibration solution, two AAA alkaline batteries and a carrying case. It is not a pH, ORP or optical instrument.
Choose AI237 for routine recipe comparisons and high-concentration salt-solution checks, not a sodium-specific laboratory assay. The US manufacturer describes the result as sodium chloride weight percentage. In mixed foods, interpret the conductivity-derived result as NaCl-equivalent concentration rather than total salts or independently measured sodium.
Each card opens that model page. Match the supplied electrode and documented sample method. pH and conductivity-derived NaCl food salinity are different measurements. Match the parameter and meter format before comparing accessories; optional items are not supplied unless the exact kit list says so.
AI221
Simple pH spot checks
Slim replaceable probe and one-point pH 7.00 calibration.
AI223
Finer pH display
0.01 pH resolution and up to three calibration points.
AI237
NaCl food-salinity checks
Conductivity-derived NaCl weight percentage, not pH or marine ppt.
The front button handles power and calibration. Read the percentage on the LCD after stabilization; it does not simultaneously show temperature. Auto-off after ten minutes without operation and a low-battery indicator help manage portable use. The display photograph is illustrative, not a tested sample result.
Dissolved ions carry current through the sensing cell. The instrument expresses that response on a NaCl concentration scale. Other conductive ingredients can affect the result. Its platinum-black coating needs gentle treatment; a protected sensing head does not make the surface abrasion-proof.
The current US page prints accuracy as ±0.4% without defining the basis. The official European 5053 manual instead prints ±2%FS ±one world. That wording is preserved, not silently corrected or combined into a new tolerance. Neither expression establishes performance for every food mixture.
Compare representative liquid portions using the same recipe, sampling procedure and temperature conditions. Suspended solids, uneven mixing and fat layers can make readings unrepresentative. Establish a repeatable preparation method before using differences between batches to guide seasoning.
Use compatible water-based samples that wet the sensor properly. Oil-rich emulsions, thick residues and changing ionic ingredients require method checks. A reading cannot certify curing performance, food safety or the chemical composition of a brine. Use an appropriate reference assay when those decisions matter.
Prepare the supplied two AAA batteries with correct polarity, remove the electrode cap and inspect the sensing end. Rinse with pure water and shake off excess water. Use a clean portion of the specified 50.0 mS/cm conductivity standard; do not substitute 12.88 mS/cm or an assumed percentage salinity solution.
The exact 5053 manual directs the operator to immerse, stir and then leave the probe still until the standard reading is repeatable. Hold the button for about two seconds until CAL appears and 50.0 mS flashes. Calibration completes after several seconds. The mS indication belongs to calibration, not a documented selectable conductivity measurement mode.
Rinse again, shake off excess water, immerse in the sample, stir gently and allow the reading to settle. Automatic compensation covers 0 to 60°C, but does not eliminate thermal equilibration. Cool hotter food samples before testing and use a separate thermometer. Do not promise a fixed ten-second result in every mixture.
The exact manual requires pure-water rinsing before measurement and after use, followed by shaking off water and replacing the cap. Carryover from concentrated samples can distort the next reading. Keep the sensing area clear of trapped material without scraping or polishing it.
For a stained electrode, the manual permits warm water with detergent or alcohol and explicitly says not to wipe the coating. Rinse away cleaning residues and verify calibration before returning to work. This cleaning guidance is not a validated food-contact sanitation procedure or permission to use arbitrary solvents.
IP57 is the published enclosure rating, not authorization for dishwasher cleaning, steam sterilization or unrestricted chemical exposure. No exact replacement-probe part or user replacement procedure was located. Confirm service options for 5053 specifically rather than assuming that probes from other Apera testers fit.
Use the controls only for the measurement and calibration functions documented for this exact tester. Check the displayed value, unit and any documented calibration indicator before assigning a result to a sample. Screen values in photographs are illustrative, not sample results. The model-specific record and output workflow is explained below.
Follow the exact parameter-specific calibration procedure, using the required standard, solution or calibration atmosphere. Temperature compensation does not make different sample temperatures, preparation methods or chemistry equivalent. Follow the model-specific meter and electrode instructions before extending the method to a new sample.
Result memory and computer export are not documented for 5053. Write down the reading, sample identity, preparation, separate temperature measurement and calibration check. The 0.1% display increment is resolution, not a guarantee that every difference of that size is significant.
Weight percentage means grams of NaCl per 100 grams of solution for the stated NaCl basis. In mixed foods, the displayed equivalent is not a direct weighing of dissolved solids. Do not relabel it as marine ppt, TDS or dietary sodium.
Related workflow: Apera Salt20 Pocket Salinity Tester Kit (AI214). Salt20 is a separate low-salinity water tester, not an equivalent high-concentration NaCl food meter. Its units, range and intended sample conditions differ. Compare the exact supplied sensors, measurement parameter, accessories and data features rather than assuming similar model names mean identical kits.
No. It reports a conductivity-derived NaCl salinity scale. It is not sodium-selective and does not provide pH, ORP or optical refractometry.
The exact 5053 manual gives 0 to 20.0% with 0.1% resolution. The current US description identifies weight percentage for sodium chloride solutions.
The current US page does not define it as relative error, percentage points or full-scale error. Do not assume a basis. The European exact-model manual uses different wording: ±2%FS ±one world.
The current US kit lists 50 mS/cm calibration solution. Bottle volume is not specified there. One-point calibration uses that conductivity standard, not 12.88 mS/cm.
No. Compensation is automatic from 0 to 60°C, and the manual explicitly states no temperature display. A separate thermometer is needed to record sample temperature.
No result-memory or export workflow is documented. A user-replaceable probe and compatible replacement part were not verified; seek model-specific service advice before purchase if replacement is essential.
The manual suggests every one to two months under normal conditions and says the meter is factory calibrated. Food residues and demanding comparisons justify additional checks; verify after cleaning or suspect readings.
The current US policy provides two years for the instrument and six months for the probe from delivery, for qualifying defects in materials or workmanship, with repair or replacement at Apera's option. Exclusions include accidental damage, improper use, normal wear, transportation, storage, failure to follow instructions, unauthorized maintenance, modifications, combination or use with any products, materials, processes, systems or other matter, unauthorized repair, and external causes including abuse or events beyond Apera's reasonable control. This is not a service-life guarantee.

Apera Manufacturer Limited Warranty
Keep the exact product and purchase details when requesting service. Follow the stated model-specific warranty conditions and product instructions; the instrument and supplied sensors or consumables can have different coverage terms.
Use the meter and electrode documents for their stated model and scope. Regional editions are labeled where supplied; software, probe and packing details can differ between revisions. Check the supplied instrument markings when sources describe different hardware revisions. Each card opens a verified manufacturer PDF in a new tab.
