Vigilant pH tracking during this phase is essential; a subsequent pH rise signals the onset of decomposition.

Meat's pH level significantly influences its capacity to bind water, a key determinant of consumer-perceived qualities like tenderness and color. Lower pH values correlate with reduced water binding and lighter hues. These factors are vital in optimizing meat production. For instance, crafting dry sausages demands meat with diminished water retention for uniform drying.

Across the diverse applications within the meat processing sector, target pH values fluctuate depending on the final product and required processing steps. Regardless of the end goal, maintaining a consistently low pH is paramount for inhibiting bacterial growth and adhering to stringent food safety regulations. Diligent monitoring of pH throughout production ensures the creation of reliable and safe meat products.

Measuring pH in meat presents unique challenges. Oils and particulate matter can accumulate on the sensitive glass membrane and obstruct the reference junction. The included FC2323 probe with the HI98163 is purpose-built for meat pH analysis. Its design features a robust stainless steel piercing blade with a conical tip for easy insertion, an open junction engineered to resist clogging, and a food-grade Polyvinylidene Fluoride (PVDF) body offering broad chemical resistance, including to common sanitizers. PVDF's inherent properties include high abrasion resistance, mechanical strength, and resilience to UV and nuclear radiation, as well as inhibiting fungal growth. Connecting via a secure, non-threaded, waterproof DIN connector, the FC2323 is an ideal general-purpose pH electrode for meat applications with the HI98163.

The FC2323 is an amplified pH electrode integrating a temperature sensor for automatic temperature compensation. Its low temperature (LT) glass formulation and conical tip, encased in a food-grade PVDF body with a detachable stainless steel piercing blade, ensure optimal performance in meat analysis. This electrode features a unique open junction design, utilizing a silver chloride (AgCl)-free viscolene electrolyte layer between the sample and the internal reference. This design prevents clogging and silver contamination, promoting rapid and stable readings.

Specialized FC2323 Foodcare pH/Temperature Electrode

The FC2323 is an amplified pH electrode integrating a temperature sensor. Its low temperature (LT) glass, conical tip, and food-grade PVDF body with a piercing stainless steel blade are designed for meat measurements. It features an open junction with a silver chloride (AgCl)-free viscolene electrolyte to resist clogging and ensure stable readings in semi-solid samples.

The probe's design allows for direct penetration into meat and other semi-solid foods. The conical tip ensures good contact, while the PVDF body offers chemical resistance and durability in food processing environments.

Clog-Resistant Technology

The open junction design with the viscolene electrolyte prevents clogging from meat solids, ensuring a fast response and stable pH measurements without the risk of silver contamination.

Robust and Food-Safe Construction

The PVDF body is resistant to most chemicals and solvents used in cleaning, including sodium hypochlorite. It offers high abrasion resistance, mechanical strength, and is also resistant to fungal growth, ensuring a long service life.

Enhanced Measurement Assurance

Beyond its specialized meat pH electrode, the HI98163 incorporates Hanna's CAL Check™ system, which proactively alerts users to potential calibration issues. This is particularly valuable in meat processing environments where probe contamination from food solids is common and can lead to measurement inaccuracies. By comparing current calibration data with previous values, the meter provides on-screen prompts indicating the need for probe cleaning, replacement, or potential buffer contamination. Post-calibration, an intuitive probe condition indicator is displayed as a percentage (0-100% in 10% increments), reflecting the overall health of the pH electrode based on its offset and slope characteristics, both of which are accessible in the GLP data.

In measurement mode, a simple press of the "AutoHold" virtual key freezes a stable reading, automatically logging the data. An optional "out of calibration range" warning can be activated to notify users if a current measurement falls outside the calibrated pH values, ensuring data integrity.

The log-on-demand feature allows for the storage of up to 200 samples. This logged data, along with comprehensive Good Laboratory Practice (GLP) information, can be easily recalled or transferred to a PC using Hanna's HI920015 micro USB cable and HI92000 software, facilitating traceability for specific product batches. GLP data includes critical information such as date, time, calibration buffers, offset, and slope, readily accessible via a dedicated GLP key.

A context-sensitive help menu, providing information relevant to the current screen, is accessible at any time with the press of a dedicated button.

The high-contrast graphic LCD screen ensures excellent visibility in both bright outdoor and dimly lit indoor conditions, enhanced by a user-adjustable backlight. The combination of dedicated and virtual keys offers intuitive operation with multiple language options.

The compact and durable HI720161 carrying case is custom-molded to securely house all components necessary for on-site measurements, including the meter, electrode, beakers, buffer solutions, and cleaning solutions, ensuring organized and protected portability.

Orders placed after business hours, weekends, or holidays will ship the next business day, pending product and carrier availability.

Return Policy

All return requests must be coordinated directly with Blue Tiger Scientific before a product is sent back.
Products must have a Return Merchandise Authorization (RMA) number issued by Blue Tiger Scientific before being returned.
